As an example over Overlord II, I have watched first 5 episodes of 13 total and episode 6 hasn't published yet. When I run flexget, it should only seek the new episode, which is episode 6 in this case. Also, it needs to build the RSS query with MyAnimeList fansub data of that anime. If you look there and scroll bottom, there is a "Fansubbing Groups" section and that anime has HorribleSubs as its top result with its tag [HorribleSubs]. So my RSS query should be https://nyaa.si/?page=rss&q=[HorribleSubs]+Overlord+II&c=1_2&f=2.

I saw there is a relevant plugin named my_anime_list, but I don't know how to use it for this job. And I don't know if it's relevant but for the context I'll be using transmission-daemon and crontab for other things.
